Finally – after a trip to Lakeland – I am in possession of some much-need disposable icing bags. With a housewarming party to go to, I decided to take advantage of this and bake and ice cupcakes as a gift. Rather than simply make chocolate chip batter, I opted to be more adventurous and mixed in chopped up Quality Street chocolates (not the blue ones, because coconut is divisive!). With cream cheese icing, fondant roses and other decorations, my present was ready to go.
When it comes to dessert preferences, my dad’s view tends to be the more chocolate the better. With that in mind, I made him a birthday cake of cheesecake brownie (a fantastic recipe I took from The Times a few years ago, that is now one of my staples). I iced it with cream cheese icing and chocolate buttons to give it the perfect finish.
